Pare potatoes and cut in very thin slices. Cook 5 minutes; drain. Put about 1/4 of the potatoes in a baking dish, and sprinkle on about 1/4 of the salt, flour, cheese, butter and a little pepper. Continue for 3 more layers. Mix the yolks with the milk and pour over all. Bake for an hour until potatoes are tender and custard is set. Bake at 350 degrees.

Potato Souffle

2 c. hot, mashed potatoes

1/2 c. hot milk

Salt & pepper

A little nutmeg

2 eggs, separated

Beat egg whites until stiff. Beat yolks well and add to potatoes along with the seasonings. Fold in the whites, and put into a well greased baking dish. Bake at 400 degrees for about 25 minutes. (If you have leftover cold mashed potatoes to use up, add the hot milk to them and reheat in a double boiler and beat till smooth.)
